2 green onions and tops, sliced
4 large cloves garlic, minced
2 Tbsp. butter
16 oz. pepper-jack cheese, cut up
2 to 4 Tbsp. milk
2 Tbsp. chopped tomato
8 oz. chorizo, casing removed, browned, drained and crumbled
2 Tbsp. finely chopped cilantro

Directions:
Directions:
Saute onions and garlic in butter in medium saucepan until tender, 2-3 min. Add cheese. Cook, covered, over medium to medium-low heat until cheese is melted, 8-10 min, stirring frequently. Stir in milk if mixture is too thick. Spoon cheese into bowl; sprinkle with chorizo, tomato and cilantro.

Browned ground beef, seasoned to taste with taco seasoning, can be substituted for the chorizo.
