1/2 c. chopped onions
1 tbsp. olive oil
1 1/2 c. chopped cooked chicken
1/2 c. chicken broth
2 ( 15 0z.) cans cannellini beans, undrained
1 tsp. dried oregano
1/2 tsp. celery salt
1 ( 11oz. ) jar salsa, divided ( mild or medium)
1 1/2 c. shredded mozzarella cheese, divided

Directions:
Directions:
In a 2 quart saucepan, cook onions in olive oil until tender. Add chopped chicken, mixing thoroughly, then add chicken broth.
Stir in cannellini beans, oregano, celery salt, and 1/2 jar salsa. Simmer over medium heat for 10 minutes; stirring occasionally. Just before serving stir in 1 c. mozzarella cheese. Pour into serving bowls and top each with remaining mozzarella cheese and salsa.
