1 c. sifted all-purpose flour 1 c. yellow corn meal 1/4 c. sugar 1 c. milk 4 tsp. baking powder 3/4 tsp. salt 1/4 c. shortening or oil 2 eggs
Sift dry ingredients into bowl. Beat eggs slightly, add milk and shortening/oil. Add to dry ingredients, mixing well. Put 1/8 inch oil in bottom of pan. Heat pan and oil until hot. Pour mixture in pan and bake at 425 degrees for about 20 minutes or until golden brown.
