2 cans black-eyed peas
1 c. salad oil
1/4 c. red wine vinegar
1 clove garlic
1/4 c. thinly sliced onion
1/2 tsp. salt
1/4 tsp. pepper

Directions:
Directions:
Drain liquid from peas; add oil, onion, salt, garlic, and pepper. Mix thoroughly and store in covered container in refrigerator for at least 2 days before serving. Remove the garlic clove after the first day of refrigeration
