1/2 lb. ground beef
1 cup carrots- sliced
1 tsp. dried basil
1 tsp. dried parsley
4 Tbsp. oleo, divided
1/4 cup flour
3/4 tsp. salt
3/4 cup onion- chopped
3/4 cup celery, diced
3 cups chicken broth
1 1/2 cups milk
1/4 to 1/2 tsp. pepper
1/2 cup sour cream
4 cups potatoes- diced and peeled
8 oz. Processed American cheese

Cook carrots in water until tender. Drain and set aside. In a saucepan (3 qt.) brown beef. Drain and set aside in a separate bowl. In the same saucepan, saute onions, celery, basil, and parsley in 1 Tbsp. oleo until tender (about 10 to 15 minutes). Add broth, potatoes, carrots and beef and bring to a boil. Reduce heat; cover and simmer until potatoes are done.
Meanwhile, in a small skillet. melt remaining oleo. Add flour and cook for 3-5 min. or until bubbly. Add soup and bring to a boil. Cook and stir for 2 min. Reduce heat to low. Add cheese, milk, salt and pepper. Cook and stir until cheese melts. Remove from heat and blend in sour cream.
