1 1/2 c. rhubarb
1/2 c. nuts
1 1/4 c. brown sugar
2 1/2 c. flour
1 t. soda
1 t. baking powder
1 t. salt
1/2 c. buttermilk
2 t. vanilla
1 egg
1/2 c. oil

Directions:
Directions:
In a large bowl combine brown sugar, oil, egg, vanilla and buttermilk. Stir in rhubarb and nuts. In a separate bowl combine flour, soda, baking powder and salt. Stir in rhubarb mixture and spoon into greased muffin tins. Sprinkle topping over raw muffins.

Topping:
1 T. butter, 1/3 c. sugar, 1 t. cinnamon

Bake at 400 degrees for 20-25 minutes.
