2 T. olive oil
1 lb. ground turkey
1/2 c. bread crumbs
1 egg
1 large can chicken broth
1 med. yellow onion, chopped
3 cloves garlic, minced
5 c. fresh baby spinach
Salt and pepper to taste

MEATBALLS:
Combine ground turkey, bread crumbs, egg and one clove of garlic. Roll mixture into meatballs slightly smaller than a golf ball and fry in 1 T. oil until mostly cooked.

SOUP:
Heat 1 T. olive oil and add onion and remaining garlic. Cook until onion is transulcent, being careful to not brown garlic. Add broth and meatballs. Salt and pepper to taste. Simmer for 5 minutes. Add spinach and cook until wilted.
