2 tsp. olive oil
1 red bell pepper,cut into julienne strips
1 medium zucchini, cut into 1/2 inch slices
1 pound uncooked peeled shrimp
4 cloves garlic, minced
1/2 c. diagonally sliced scallions
6 ounce package snow peas
1/4 c. lemon juice
Zest of 1 lemon
salt and pepper to taste
1/2 c. parsley, chopped
1/4 c. chopped chives

Heat olive oil in a wok or large skillet. Add bell pepper and zucchini. Stir-fry for 3 minutes. Add shrimp, garlic, and scallions. Stir-fry for 3 minutes. Add the snow peas. Stir-fry until the shrimp begin to curl. add lemon juice and zest. Stir-fry until the shrimp turns pink. Remove to a serving platter. Season with salt and pepper. Sprinkle with parsley and chives. Serve with orzo, rice, or noodles.
