1 c mayonnaise 1/2 c sweet pickle relish 2 T minced onion 1 T honey 1 1/2 T sugar 1 tsp salt 1/4 tsp pepper 3/4 c chopped celery 3/4 c coarsely chopped pecans 1 1/2 lbs chopped cooked chicken (about 4 cups)
Combine mayonnaise, relish, onion, honey, sugar, salt, and pepper in a bowl and mix well. Stir in celery and pecans. Fold in the chicken. Adjust the seasonings to taste. Chill, covered, in the refrigerator. Serve on a bed of lettuce.
