1 loaf Texas Toast Bread
6 eggs
2/3 c biscuit / baking mix
3/4 tsp cinnamon
Dash nutmeg
1 1/2 c milk
1 lb precooked sausage
1 large can apricot halves
4 T light brown sugar

Directions:
Directions:
Brown sausages, keeping 2 - 3 T of drippings. Remove sausage from pan and add brown sugar and apricots; heat until glazed (about 2 minutes).
Mix eggs, biscuit / baking mix, cinnamon, nutmeg, and milk. Cut Texas Toast crosswise and dip 1/2 slices into batter on both sides and fry in cooking oil (1/2 inch deep) until golden brown; Repeat on other side. Pat dry; cover with apricot / sausage mix.
Serve with dollop of Orange Sour Cream. (See Recipe for Orange Sour Cream)
