2 large stewed chickens, boned and cut into large chunks
1 pkg. frozen soft tortillas
1 small onion
1 small pepper
salt, pepper, and garlic salt to taste
1 tsp. chili powder
1 can cream of chicken soup
1 can cream of mushroom soup
1 can Rotel tomatoes, mashed
2 (4 oz) pkgs. grated Cheddar cheese

Directions:
Directions:
Cook soup, spices, onion, pepper, tomatoes, and 1/2 of cheese until melted. Layer in large casserole dish: Tortillas, chicken, sauce, Sprinkle remaining cheese on top. Cover and bake for 30-40 min at 350.

Personal Notes:
Saute onion and pepper in lots of butter before adding to sauce. Dip tortillas in hot chicken stock, leave whole, to warm and defrost before lining casserole dish. For extra garnish/zest, add green stuffed olives to the recipe.
