1 chicken cut into pieces
Salt Water (1 tsp of salt per cup of water)
2 cups all-purpose flour
house seasoning
shortening

Directions:
Directions:
Wash and soak in salt water for about 1 hour. Begin heating about 1 inch of shortening in a frying pan. (shortening is ready when flour sizzles when dropped in) Mix together 2 cups of flour and 2 Tablespoons of house seasoning. Dip wet chicken into flour and then into frying pan. Cook about 5-7 minutes, turn, cook until golden brown.

You can use oil instead of shortening, but shortening does not "smoke" the way hot oil does.
