1 2-lb bag small yukon gold potatoes 1/2 - 1 stick of butter (depending on how buttery you want them to be) 1/2 - 1 cup of Land O Lake Fat Free Half and Half salt and pepper (to taste)
Clean potatoes but do not peel. Boil potatoes in salted water until tender. Drain and return potatoes to pot. Add butter and allow to melt. Using a hand mixer, mash potatoes. Add half and half a little at a time until they reach the desired consistency. Salt and Pepper to taste.
