2 c. buttermilk
1 c. flour
1 egg
1 tsp. baking soda
1/2 tsp. salt

Directions:
Directions:
Mix all dry ingredients together. Add buttermilk, and egg until blended. Place on hot griddle by the 1/4 cup. Cook until bubbles cover the surface and flip over. Fill with fruit, preserves, or serve with maple syrup.

This is a very thin, crepe-like, pancake. I love it with Mom's refrigerator jam and rolled up. Yummmm!
