Dry Rub:
3/4 cup paprika
1/4 cup ground black pepper
1/4 cup salt
1/4 cup granulated sugar
2 tbsp chili powder
2 tbsp garlic powder
2 tbsp onion powder
2 tsp cayenne pepper

BBQ Sauce:
1/2 cup dark brown sugar, firmly packed
2 tbsp chili powder
1 tbsp black pepper
2 tsp sage
1 tsp ground allspice
1 tsp granulated garlic
1 tsp salt
1/2 tsp ground cloves
1/2 tsp cayenne
1/4 tsp ground mace
1 cup white vinegar
1/2 cup honey
2 tbsp worchestire sauce
2 tbsp soy sauce
1 (32 oz) bottle ketchup

For the Dry Rub:
Mix all ingredients in a bowl. After trimming the ribs apply a coating of yellow mustard onto them. Don't worry the mustard will cook off and you can't even tell it was there. Cover mustard with the dry rub and massage into the meat. Cover ribs with plastic wrap and let rest in the frig overnight. In the morning set up grill for indirect and start charcoal. While grill is heating up soak some smoke wood chunks in water. I like to use apple or cherry wood for pork. Put a couple wood chunks into the charcoals. Don't go crazy b/c over smoking can make the ribs taste bitter. Put the ribs on the grill and cover grill up and let sit for about an hour. check on the ribs every once in a while. You might have to turn them. If the outside of the ribs are getting too done you can wrap the ribs in aluminum foil. Right before you taking the ribs off, you can add sauce.

BBQ Sauce:

Combine all of the dry ingredients in a sauce pan. Blend in vinegar, honey, Worcestershire, and soy sauce. Bring mixture to a boil. Stir in ketchup. Reduce heat and simmer about 30 minutes.
