Bulgur Pilaf Recipe

1 1/4 c. water
1/2 c. dried bulgur
3 dry-packed sun dried tomatoes
2 T. pine nuts
1 T. olive oil
1 medium onion, chopped
1 medium garlic clove, minced
6 kalamata olives, chopped
2 T. parsley

Directions:
Directions:
Bring water to a boil. Add bulgur and sun dried tomatoes. Simmer on low, covered for 15 minutes.

Toast pine nuts, remove from pan.

Saute onion and add garlic for last 3 minutes.

When bulgur is tender, mix all ingredients together. Use salt and pepper to taste.

This is a really healthy side dish- lots of fiber! I sometimes have to buy bulgur at specialty stores though.
