1 package fresh cranberries, rinsed
2 cups sugar
1 cup fresh orange juice
1 T. finely minced fresh ginger (optional)

Directions:
Directions:
Combine ingredients in a large saucepan and cook over medium heat until berries pop open, about 10 minutes. Stir occasionally. Skim the foam off the surface and cool to room temperature and serve. Or, refrigerate, covered, for as long as 2 months.
