2C whole bran cereal + 2T flaxseed
1 1/2C buttermilk
1 cup canned pumpkin
1/2 C vegetable oil
2 tsp orange zest, grated- 1 orange
2 eggs
2 1/2 C flour
1 1/2 C sugar
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1/4 tsp cloves
1/4 tsp allspice
1 C raisins or dried cranberries
1/4 C nuts, chopped (optional)

In a large bowl, combine cereal and buttermilk. Let stand 5 minutes to soften cereal. Add pumpkin, oil, orange zest, and eggs; blend well. Stir in flour, sugar, and spices. Fold in dried fruit and nuts. Batter may be baked immediately or stored up to two weeks in the refridgerator in a tightly covered container. Grease pan or line with muffin papers. Fill each muffin cup 3/4 full.sprinkle each muffin with sugar. Bake 18-22 minutes.
