1 egg
1 Tbsp sugar
1 c. buttermilk
2 Tbsp oil
1 C flour
1 tsp baking powder
1/2 tsp baking soda

Directions:
Directions:
Beat egg and sugar with electric hand mixer. The longer you mix, the airier the pancakes will be. After a couple of minutes, add buttermilk and oil. Add dry ingredients. Mix as little as possible to get the flour in (may be slightly lumpy).

Cook on a lightlly oiled griddle or frying pan. When the edges are starting to dry, flip them over to finish cooking.
