60 lbs. ground beef, 15% fat
2 (6 lb.) cans chopped tomatoes
3 (28 oz.) cans chopped green chilis
6 small (7 3/4 oz.) cans El Pato tomato sauce
1 1/2 C dry granulated garlic powder
2 C dry granulated onion powder
1 C ground cumin
3 C Gebhardt chili powder, or to taste
Lawry's Seasoned Salt, to taste
Black pepper, to taste

Brown ground beef in big pans in a 375 oven. Break it up as it cooks. Drain in a colander set over a large pan.

Mix beef with the rest of the ingredients (you need a very large pan and a very strong stirrer). Taste and correct seasoning. Heat in the oven or on the range top. If not serving immediately, cool over an ice water bath and refrigerate until you are ready to heat it in the oven or on the range top.
