3 tbsp BUTTER
1/4 CUP SUGAR
1 EGG
1 1/4 CUPS S.R. FLOUR
VANILLA
1/2 CUP APRICOT JAM

TOPPING -
1 CUP COCONUT
3/4 CUP SUGAR
1 EGG

BASE -
BEAT BUTTER AND SUGAR TO A CREAM. ADD EGG & BEAT WELL, ADD VANILLA. SIFT FLOUR AND ADD TO MIXTURE TO FORM A STIFF PASTE. PRESS OUT EVENLY IN A GREASED 28 X 18CM TIN. SPREAD THINLY WITH APRICOT JAM.

TOPPING -
BEAT EGG, ADD COCONUT AND SUGAR, SPREAD OVER JAM. BAKE IN A MODERATE OVEN FOR 20 MINUTES. COOL SLIGHTLY BEFORE CUTTING INTO SQUARES.

THIS WAS JIM'S FAVOURITE MORNING TEA. PAT WOULD OFTEN HAVE THESE BISCUITS READY FOR HIS MORNING TEA. CAN SUBSTITUTE OTHER JAM FOR APRICOT.
