2 pkgs cream cheese,
1/2 cup sour cream,
4 to 6 medium sized dill pickles,
8 oz dried beef,

crackers to serve with spread

Finely chop pickles and dried beef.

Stir cream cheese to smooth.

Add pickles, dried beef and sour cream to the cream cheese and mix well.

Have a spreader or knife handy to spread this on crackers.

This is a cheater version of the always welcome pickle roll ups. If you prefer the mess, skip the sour cream and spread the cream cheese on layers of dried beef. Roll this around a dill pickle and slice into bite sized pieces.
