2-Pkg. Fried Rice (Rice-a-Roni),
1-head of Cauliflower,
Lots of mushrooms (sliced),
2-3 cups cheddar cheese,
Sour Cream
Salsa

Directions:
Directions:
Cut the head of Cauliflower into 1/4's , Steam until cooked. Prepare (Rice-a-Roni) per package directions, reducing the amount of water slightly. When you add you water to the rice also add the mushrooms. Cook as directed. When rice is done, cut in Cauliflower with spatula and add the cheddar cheese.

When serving flatten rice mixture on plate and spoon on Sour Cream and then Salsa.
