3 clove garlic
1 medium onion, chopped
1 small zucchini, diced (optional)
1 medium carrot, diced (optional)
2 tbls. olive oil
10 oz. frozen spinach
1 tsp. basil
1 bay leaf
2 cans (14 oz. each) stewed tomato
1 can (48 oz.) chicken broth
1 package (10 oz.) frozen cheese tortellini

Saute garlic, onion, zucchini, carrot in olive oil. Add spinach, basil, bay leaf, stewed tomato, and chicken broth. Bring to a boil for 10 minutes. Add tortellini and boil for 5-10 more minutes.
