3 lb. pork, cut into bite-size pieces

2 eggs
9 Tbsp flour
5 Tbsp cornstarch or chestnut flour
salt
1/4 C water, or until pasty

Oil for frying

Directions:
Directions:
Mix the eggs, flour, cornstarch, salt, and water to make a batter. Add pork chunks. Drop battered chunks into hot oil until golden. Just before serving, re-fry the pork. Pour sweet and sour sauce over pork and serve.

I got this recipe from my Gung Gung, Henry Chew, Sr. His Sweet and Sour Sauce recipe is also in this cookbook. I imagine that he used this recipe at the Chew Cafe that he owned and operated.
