4 5 med zucchini (1lb) unpeeled
salt
cup finely crushed saltines
c grated parmesan
cup mayo

Directions:
Directions:
Wash & cut zucchini lengthwise into flat slices about thick. Place in colander & sprinkle with salt let stand 15 min. Blot off moisture with paper towels. Combine cracker crumbs & cheese in flat pan. Spread zucchini slices on each side with thin layer of mayo & drop into breadcrumbs. Lay close on greased cookie sheet. Bake 400 F until crisp, 15-20 min.
