1 clove garlic
1 loaf italian bread (sourdough or rosemary bread works well too)
1 c. chopped tomatoes
1 c. cucumber, peeled and chopped
1 c. chopped red onion
1 clove garlic, minced
2 c. chopped fresh basil
1/8 c. chopped fresh thyme
1/4 c. olive oil
2 T. balsamic vinegar

Directions:

Rub a peeled clove of garlic around a wooden salad bowl. Pull apart or chop the bread into bite-sized pieces. Add everything to the prepared bowl and toss. Only add enough olive oil and vinegar to lightly coat.
