1 prepared 9" graham pie crust
1 tub (2 litres) vanilla ice cream

sauce: Makes 2 cups
1 cup firmly packed brown sugar
1/2 cup natural honey
1 tbsp butter or marg.
3/4 cup smooth Peanut Butter
3/4 cup milk or light cream

Ice Cream Pie:
With small ice cream scoop, completely cover the bottom of the pie shell with ice cream.

sauce:
Combine sugar, honey and butter in a 4 cup microwave bowl. Cook at medium-low 4-4 1/2 minutes, until sugar is dissolved, stirring once. Add peanut butter and whisk until smooth. Stir in milk or cream. Refrigerate until cool.

Once sauce is cool drizzle peanut butter sauce over ice cream. Place in freezer about 15 minutes to harden. Alternately cover first layer of ice cream an additional layer of ice cream and peanut sauce. Garnish top with chopped peanuts if desired. Freeze until ready to serve.
