12 large flour tortillas;
2 chorizo sausage links (I like pork vs beef)
1 doz large eggs

Directions:
Directions:
Heat chorizo slowly in frying pan, without oil, breaking up and turning till chorizo is thoroughly browned, but not charred. Drain off grease.
Fold in eggs till eggs are almost dry. (fold as bottom of egg dries, don't stir too much. When done, put on warm tortilla & fold like a purse (bottom up, sides in and fold over). Eat immediately.

This is an authentic Mexican recipe from one of Henry's friends. Easy, yummy, and fast. I like it for breakfast, but had it first for dinner.
