1 Tbsp Canola oil, 2 cups frozen Hash Browns, 1 bunch of Scallions,1 tsp dried Parsley, 6 Eggs or 2 cups of Egg Substitute, 1/2 cup Shredded Cheddar Cheese, 1 Tbsp. Parmesan Cheese, Salt & Pepper to taste.

Heat oil in a skillet. Add hash browns, scallions, and salt. Cook, stirring frequently until potato and scallion are tender. Stir in parsley. Remove from skillet. Add eggs and allow to cook until set, about 7-8 minutes. Spoon potato and scallion mixture over the cooking eggs. Top with cheeses, sprinkle with pepper. Cover and remove from heat, Allow to sit for 3 mins. Serve.
