1lb spaghetti
1 - 1 1/2lbs Mild or Hot Italian Sausage
2-3c Your favorite sauce
2 lbs Ricotta Cheese
3c Mozzarella Cheese
1c Parmesan or Romano Cheese, grated
2 eggs, beaten

Directions:
Directions:
Boil pasta according to instructions. Cook and drain sausage while pasta is cooking. Set aside. When pasta is done, drain and run for a few seconds under cold water. Add back to pan and add your sauce. Egg beaten eggs (make sure pasta is only warm and not hot) Mix well. Add the Italian sausage, 1 1/2c of Mozzarella and crumble in the Ricotta. Transfer into a 9x13 Pyrex baking dish and sprinkle with the remaining Mozzarella cheese. Bake covered for 25 mins at 350, then uncovered for 10 mins longer.
