1- 2 lbs. ground beef
1/2 cup onions, diced
1 can mixed veggies
1 can potatoes and green beans
1 to 2 cans beef stock, low sodium
about 3 Tbsp. cornstarch
1/4 cup cold water
1/4 Tbsp. thyme leaf (optional)
1/2 tsp. onion salt
1/2 tsp. ground black pepper
1/2 tsp. salt (or Mrs. Dash)
mashed potatoes (fresh or boxed)

1. Brown ground beef. Drain fat and discard.
2. Add onions to ground beef and saute' for 5 minutes.
3. Mix veggies into ground beef mixture. Set aside.
4. Heat beef stock to a boil. In a small bowl, combine cornstarch and cold water. Slowly, add cornstarch mixture to beef stock, stirring constantly. Reheat to a boil.
5. Add thyme, onion salt, black pepper, and salt to cornstarch gravy.
6. Add gravy to ground beef mixture.
7. Pour ground beef mixture in a 9x9 in pan.
8. Make mashed potatoes from scratch or use boxed potatoes.
9. Spread mashed potatoes over ground beef mixture.
10. Bake at 375, for 45 minutes and thoroughly heated.
