1 head cabbage – either Napa or Purple cabbage are great
1 hand full of green onions diced
I hand full Italian flat leaf Parsley chopped
2 spoonfuls Dijon mustard
2 spoonfuls Sherry vinegar
1 Jalapeño diced
1 Garlic clove diced

Directions:
Directions:
Shred or cut very thinly the cabbage (like slaw). Mix chopped parsley and green onion together and set aside.

For the vinaigrette: recipe should yield 1/4 cup.
Toss together two spoonfuls of Dijon mustard, the same proportion of Sherry vinegar and some diced jalapeño and one diced garlic clove. Slowly whisk in oil to make a vinaigrette. Whisk until emulsified.

Add vinaigrette to the slaw. You want to let this ‘marinate’ or infuse for 2 hours or overnight is even better.

In honor of Saint Paddy’s day and fatty fatty corned beef, here’s a healthy recipe to counter-balance all the beer you’ll be drinkin’. Eat this as a side dish to any meat entrée, alongside some tacos, or as a light snack pre work out. There’s no mayo in here, and it’s pretty healthy and fresh. Happy Cooking!
