Ingredients: 1 cup bulgar 2 cup boiling water 4 Tbl chopped fresh parsley 2 celery ribs thinly sliced 1 pomegranate 1 orange 1 Tbl olive oil Salt & Pepper to taste
For the vinaigrette: 1 Orange 1Tbl Olive Oil

Directions:In 2 cups of boiling water place bulgar until completely covered. Stretch a piece of plastic wrap over the top and set aside until the water is absorbed and bulgar is cooked to al dente (10-15 minutes). Add more boiling water, if you want a softer grain.
Once water has been absorbed add chopped fresh parsley and celery. Next toss in your pomegranate seeds and season to taste with salt & pepper.
For the vinaigrette: Squeeze in the juice of one orange and a tablespoon of olive oil and toss. For a looser salad, use more orange juice. For a more prominent citrus flavor, add some of the orange zest. Delicious. |
