1 lb shrimp or crayfish peeled
2 cooking spoons oil
2 cooking spoons flour
2 medium onions, chopped
2 cloves garlic, minced
1 tbs parsley flakes
salt
pepper
cayenne
1-2 cups water
garlic and onion salt to taste

Directions:
Directions:
Make dark roux, add onions, garlic, parsley and shrimp or crayfish. Brown 10 minutes. Add water and seasonings and simmer for 45 minutes to 1 hour. Serve over rice.
