small pot of left over cold grits
1 onion or several scallions
several tablespoons bacon grease
salt & pepper

Directions:
Directions:
Chop onions and sauté in bacon grease, add cold grits, a little more grease and stir with a fork until grits becomes soft again. Salt and pepper to taste and serve hot.

This is a favorite of my Dad, Willie Carter. He says he used to make this at the hunting camp for Jack/BoBo/Ed and the others. After they tasted it they stopped throwing out the cold grits to the dogs and made this instead. It actually is quite good, try it.
