1 c. cinnamon
*1 tsp. each allspice, nutmeg & ginger
1 c. applesauce

(*3 tsp. pumpkin pie spice can be substituted.)

Directions:
Directions:
Combine cinnamon and other spices. Gradually add applesauce and stir until stiff. Sprinkle rolling surface with cinnamon (or sugar if making a sugar cookie ornament) and roll dough about 1/4" thick. Use cookie cutters for shapes. Lay on cutting board & cover with newspaper to dry, turning twice a day so they don't curl. Allow to dry for about 4 days, make a hole in the top before dry to hang up with string. (When I tried to dry on a low heat in the oven they would crack & curl up)
