2 large bags of cut-up Mustard Greens
or 1 large bunch (uncut)
1/2 lb. bacon

Directions:
Directions:
In a large stock pot, fry bacon. As bacon is frying, wash greens in colander. While greens are still dripping with water, add to bacon. (Bacon does not have to be completely cooked, as it will continue to cook with greens.) You will probably have to add the greens in batches. Each time add salt, pepper, and sugar (shhhh! the sugar is my secret ingredient!). If there is not enough liquid, add water as needed. Continue adding greens till they are wilted down. Reduce heat and simmer 20 to 25 minutes.

Collard greens or turnip greens may be substituted and/or mixed with the mustard greens. If I made greens on "Poker Night" at my house (which used to be almost everynight!), I would always make a pan of hot cornbread for Uncle Jack. He would always break off a piece before I could turn it out of the pan. And of course, I always kept a large supply of hot pepper sauce for Uncle Marvin and Ronnie Joe to douse on their greens!
