4 eggs
1 c. coconut
2/3 c. sugar
1/2 tsp. salt
1/4 tsp. nutmeg
1 tsp. vanilla
2 2/3 c. scalding hot milk
( use part cream for extra rich pie)

Directions:
Directions:
Heat oven to 450. Heat milk until film forms on the top, but don't boil. Skim top. Beat eggs slightly with rotary beater. Then beat in rest of ingredients.Pour into pastry lined 9" pie pan. Bake 15 minutes, then reduce heat to 350 and bake 10-15 minutes longer, just until a knife inserted 1" from the side comes out clean. The center may still look a bit soft, but will set later. Caution: Over baking makes custard "watery".
