1 can (17oz.) apricot halves
2 c. sifted flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. chopped walnuts
2/3 c. sugar
1/2 c. shortening
2 eggs
3 T. orange juice

Directions:
Directions:
Drain apricots, reserving syrup. Puree apricots in electric blender. Add enough apricot syrup to pureed apricots to measure 1 cup. Sift together flour, powder, soda & salt; mix with nuts. Cream together shortening and sugar in bowl; beat in eggs. Stir in orange juice and puree. Add flour-nut mixture and mix well. Pour batter into 9x5x3-inch loaf pan or 3 greased and floured 17-oz. cans. Bake at 350 for 40 to 45 minutes or until toothpick comes out clean. Cool 10 minutes; remove from pan and cool on rack.
