3 yellow squash grated
2 eggs beaten
1/2 tsp sugar
5 Tbsp flour
1/2 onion diced
1/2 bell pepper diced
Salt & pepper to taste
Oil, enough to fill frying pan about 1/4 full

Directions:

Mix all ingredients well, and drop by spoonfuls into hot oil. Fry until golden brown, turning when needed. Drain on paper towels and serve hot.

This recipe is from my Mom, Edna Carter. These taste great and are good as an appetizer or served as a vegetable with a meal. Her hand written recipe is covered in flour and grease so it's been used a lot.
