6 medium potatoes, sliced thin
C chopped onion (or more)
Smoked or polish sausage, or cubed ham

2 C milk
3 T butter
3 T flour
1 8oz brick extra-sharp cheddar cheese, cut into chunks.

Directions:
Directions:
Heat oven to 350.
Grease a 2 qt or larger casserole.

In medium saucepan: make sauce with milk, butter and flour, stir until hot and smooth. Add cheese and continue stirring until melted and smooth again.

Layer potatoes, meat, onions, sauce, 3 times.

Bake, covered, 45 minutes. Uncover and bake another 45 minutes or until potatoes are tender.
