1 1/2 tablespoons shortening (or spray pan with cooking spray)
3 medium potatoes, peeled, pared and thinly sliced
Salt and pepper
1/2 cup chopped onions
2 cups cooked, cubed ham
3 eggs
1/2 cup shredded cheddar cheese

Directions:
Directions:

Melt fat in pan or spray the pan. Spread half the potatoes in pan; sprinkle with salt and pepper. Top with a layer of half the onion and half the ham. Repeat the layers. Cover and cook over low heat till potatoes are tender (about 20 minutes). Break eggs into bowl and whip with fork. Pour over potatoes, etc., cover and cook till eggs are set (about 10 minutes). Top with cheese and cover till cheese melts (about 2 minutes). Cut in wedges to serve.
