Cooking Oil -enough to fill a frying pan (preferably an iron skillet), about 1/2 full, potatoes for as many french fries as you want, 1 1/2 cups of self rising flour, 3/4 tsp salt- both plain and seasoned, and lots of pepper, and some catsup.

Peel and slice potatoes for french fries, place in a bowl of water for a few minutes. Mix flour, salt and pepper and seasoned salt. Begin heating grease. Roll moist potatoes in flour mixture until well coated and add to pan. Grease is hot enough to begin cooking when a drop of the flour mixed with water, "sizzles" when dropped. Cook until golden brown, stirring occasionally. Remove and drain on a "paper toweled" plate. Serve hot with catsup.

This recipe is from Eva Mae Sapp, my mother in law. This is the first I know of it ever being written-she passed it to me via her son, my husband Ronnie, AKA as "Ronnie Joe". He LOVED these potatoes so I had to have Eva Mae show me how to make them. They are still a hit in this family not good for your cholesterol but good for your heart as a comfort food.
P.S. If you put newspaper on your counter before you start, it is a lot easier to clean up.
