2 cups elbow macaroni
1 stick butter
3 tbsp. flour
2 c. milk or light cream
2 c. velveeta cheese
2 c. grated medium cheddar cheese
1 c. sour cream
Salt & pepper
Paprika

Directions:
Directions:
Bring 4 qt. salted water to a boil and cook macaroni until tender. Drain and set aside.

In separate pan melt the butter. When melted, mix in the flour and salt & pepper. Once butter and flour are blended, gradually stir in the milk. Continue to cook for an additional 2-3minutes.
Simmer over low heat, stirring constantly until sauce is thickened and smooth. Add cheese and sour cream and continue to stir until cheese is melted.

Combine macaroni and cheese sauce in casserole dish. If you have extra cheese, sprinkle on top along with paprika.

Bake in preheated 350 degrees over for 20 minutes.

This is a recipe that I have created gradually over the years. This year (2008) I have added the sour cream.
