Commercial Steak Rub (Suggest Spade L from Smiths Meat Counter)
1 tritip steak roast

Sandwich items: rolls, pesto, roasted green chilies, and tomatoes

Directions:
Directions:
Wet roast down with water. Apply rub and rub it generously into the meat. Refrigerate over night. When ready to cook: Set one part of grill to high heat, and sear each side of meat approximately 5 minutes per size until nicely charred. Move roast to a cooler side of grill on low heat, cook approximately 10-12 minutes on each side or until done. Pull meat off of grill and let meat set for ten minutes before cutting. Cut across the grain into thin slices.
Goes great as a sandwich with pesto, tomatoes, and roasted green chilies.

This steak is better when cooked medium well.
