11/2 c. Graham Cracker Crumbs
1/4 c. Sugar
1/4 c. Butter softened
1/4 tsp. Cinnamon

cake:
1 pound of cream cheese
1/2 c. sugar
2 tbsp. flour
1/4 tsp. salt
11/2 tsp. vanilla
4 egg yolks and whites separated
1 cup light cream

Directions:

crust:
combine crumbs, softened butter, 1/4 cup sugar, and cinnamon. Mix thoroughly. Press into the bottom and lightly up the sides of a buttered 9" springfoam pan. Set Aside.

cake:
Preheat oven to 350
Mash cream cheese in a bowl until smooth. Ad flour, 1/2 cup sugar, salt and vanilla. Beat with a mixer until smooth and fluffy. Add egg yolks one at a time and beat well after each addition. Stir in cream. Whip egg whites in a bowl until stiff but not dry. Fold cheese mixture into the egg whites. pour into the crumb lined pan. Bake for 1 hour 5 minutes until center is set (firm to the touch). Let cool completely. Run knife around edge of pan and remove. Chill until ready to serve. Increasing the amounts will increase the cooking time.
