2 c. flour
Dash of salt
2 tsp. cinnamon
1 c. butter
1 c. sugar
1 egg, separated

Directions:
Directions:
Sift flour, salt, and cinnamon together. Cream butter and sugar, then beat in egg yolk. Gradually add the sifted dry ingredients; the dough will be quite stiff. Form into small balls and flatten gently with your hand. Criss-cross with a fork and brush with egg white. Bake on ungreased cookie sheets at 350 for 6-8 minutes. Enjoy!
