3/4 cup vanilla wafer crumbs
3 egg yolks, well beaten
1/4 cup lemon juice
Grated rind of one lemon
1/8 tsp salt
1/2 cup sugar
3 egg whites, beaten stiff
1/2 cup evaporated milk, chilled

Directions:
Directions:
Line a refrigerator ice tray with half the vanilla wafer crumbs. Combine egg yolks, lemon juice, lemon rind, salt and sugar. Cook in a double boiler until thickened. Cool. Whip the chilled evaporated milk and add, along with the beaten egg whites, to the lemon mixture. Pour over the vanilla wafer crumbs and cover with the remaining vanilla wafer crumbs.
