20 Ritz crackers
3 egg whites, stiffly beaten
1 c. sugar
1 tsp. vanilla
1 c. nuts (pecans or walnuts)
Pinch of salt

Directions:
Directions:
Mix ingredients as listed, then put into a greased pie plate/ Bake at 350 for 30 minutes. Cool and cover with pint whipped cream and let stand in refrigerator for 3 hours or more.

This tastes like pecan pie - and no crust needed.
